Dear Larry and Luna,
Thank you for making this wonderful new dessert treat!!! I am dairy intolerant, esp. ice cream, and I also prefer using agave to sugar, so when I found your product in Portland, I was ecstatic. I have tried several flavors and plan to try them all....Thanks for your yummy creation. I am a lifer. Please grow your business slowly and steadily, and never go away!!

Sincerely, (and completely satiated having just had a wonderful bowl of Vanilla Island)

What's Special About Coconut Milk?

coconuttreeWhile its natural richness creates the creamy texture that people love, the fat in coconut milk is very different from other fats. High in medium-chain triglycerides (MCTs) identical to those in human breast milk, coconut milk has similar germ fighting and heart-protective properties.

Unlike other fats, MCTs do not need to be broken down and can be used immediately by the body as energy; it's the ideal fat for people who commonly have trouble digesting fat, such as those with a slow metabolism, colitis, and hypothyroidism. Coconut fat actually stimulates metabolism.

There is a lot of information on the web about the health benefits of coconut. We have found this site to be extremely thorough, and is a great place to start. Also no ads or pop-up windows.

What is Agave Syrup?

agaveAlthough sweeter than sugar, agave syrup has a much lower glycemic index, which means it causes only a gentle rise in blood sugar, rather than the "sugar rush" and subsequent "crash" which many people experience when they eat sugar. Many people who are sensitive to sugar, including some diabetics, can tolerate agave.

Agave syrup is concentrated from the nectar that is produced abundantly in the thick, succulent leaves of the agave plant, which grows naturally throughout Mexico, where it is called the "tree of life and abundance" and is traditionally used in celebration and ceremony.
